Bullock’s Buzz Weekly Recipe

Lemon Chicken Primavera

 

  Tonight’s recipe actually came from a Knorr Homestyle Stock recipe booklet.  As part of a Smiley360 Mission, I had received a sample of Knorr’s Homestyle Stock, chicken flavor, which came with a small recipe book. This recipe came from that book, and has become one of our family’s favorites.  It takes very little time, and I highly recommend using the Knorr stock for the chicken stock, it adds the perfect amount of flavor without being as salty as a lot of stocks I have tried.

This recipe will serve 4. It takes about 15 minutes to prep, and 10 minutes to cook.

Lemon Chicken Primavera

Tools You Will Need:

-measuring cup

-teaspoon and tablespoon                       dinner2

-bowl

-large ( 12”) skillet

INGREDIENTS

- 1/3 cup all purpose flour

- 1/4 tsp. ground black pepper

- 1 lb. boneless, skinless chicken breast

- 2 eggs, lightly beaten

- 3 tbsp. butter (divided)

- 1 large shallot or small onion, finely chopped

- 1 cup water

- 2 tbsp. lemon juice

- 1 tub Knorr Homestyle Stock, chicken flavor

- 6 ounces of asparagus, trimmed and cut into 1/2” thick diagonal slices (about 1 cup)

INSTRUCTIONS

1.  Combine pepper and flour in a shallow dish.

2.  Dip chicken into the eggs, then the flour mixture;  set aside.

3.  Melt 2 tbsps. butter in skillet over medium-high heat.

4.  Brown chicken, turning once, for about 5 minutes. Remove chicken, set aside.

5.  Melt remaining 1 tbsp. butter in same skillet over medium-high heat and cook shallots, stirring occasionally until tender, for about 4 minutes.

6.  Stir in water and Knorr Homestyle stock until stock is completely dissolved.

7.  Bring to a boil over high heat, stirring frequently.

8.  Add asparagus and return chicken to skillet.

9.  Reduce heat to low and simmer until chicken is completely cooked and asparagus is tender (about 3 minutes).

10.  Stir in lemon juice.

11.  Serve and enjoy!

TIPS:

- Serve over rice

- Try using green beans, broccoli florets, green peas or sliced mushrooms instead of asparagus!
